Sushi may have started out as a niche favourite in India—frequented by the well-travelled, the curious, and the cautious—but in recent years, it’s carved a mainstream identity of its own. Walk into any pan-Asian restaurant today, and it’s clear: Indian diners are no longer hesitant about Japanese food. They’re embracing it—with chopsticks, wasabi, soy, and all.

Part of this growing affection can be credited to restaurants that have reimagined sushi for the Indian palate without compromising its core essence. And leading that creative curve is Guppy, the Japanese kitchen and bar in New Delhi’s Lodhi Colony, best known for its colourful, contemporary take on Japanese food culture.

This year, as International Sushi Day rolls in on June 18, Guppy is offering a line-up of inventive sushi creations that reflect the bold, artistic style it’s loved for. From rich seafood medleys to unlikely fusion rolls, there’s a clear focus on texture, flavour play, and unexpected pairings.

If you're into layered flavours and a little drama on the plate, the Crispy Scallop & Spicy Cod Roe Roll brings together crab meat, scallops, spicy cod roe, miso mustard, and a satisfying sweet potato crunch. For a torched finish that’s hard to resist, the Aburi Salmon Roll layers salmon belly with prawn tempura, cucumber, and flying fish roe.

There’s also a growing love for fusion-forward sushi, and Guppy doesn’t hold back. The Chilli Brie Tempura Roll combines gooey cheese with gentle heat from mild chili, plus gochujang mayo and kale chips. It’s not traditional—but it’s bold, indulgent, and built for a palate that enjoys experimentation.

Heat-seekers might want to try the Kampachi & Jalapeño Roll, which balances yellowtail fish with jalapeño mayo, fresh jalapeños, and crispy sweet potato. There’s a lot of texture, a lot of heat, and a refreshing punch in every bite.

Of course, sushi is no longer a seafood-only affair. Vegetarians have plenty to look forward to too. The Veggie Volcano Roll offers a creamy-crunchy combination of fried tofu, avocado, mascarpone, crispy corn, and spicy gochujang mayo. And for those with a sweet tooth, the Mango & Avocado Cream Cheese Roll brings sushi into dessert territory, pairing sushi rice and mascarpone with mango, takuan, sesame, and crispy tanuki for a tropical twist.

While sushi remains at the centre of the celebration, the larger atmosphere at Guppy is designed to keep things casual, bright, and spirited—just like the food. With its playful aesthetic and expressive menu, it’s clear that the restaurant isn’t trying to replicate Tokyo’s serious sushi bars—it’s carving out its own space, where tradition meets imagination.

Whether you’re a long-time sushi fan or just warming up to Japanese cuisine, June 18 might be a good day to explore new rolls and revisit old favourites. And if you enjoy discovering how different cultures are adapted and appreciated locally, Guppy’s evolving menu is a good example of how far sushi has come in India.
